Panela is an unrefined whole cane sugar, obtained by cold-pressing sugarcane juice, cooking the juice and then naturally crystallizing the molasses. Renowned for its taste and nutritional properties, panela is naturally rich in essential nutrients (potassium, calcium, phosphorus, magnesium, iron, zinc). It also has a lower glycemic index than conventional sugar.
